give me the black pill on stand mixers

you probably won't use it often enough for it to be worth it

They're overpriced for what they are (especially that one with the wood bowl) and you'll seldom actually use it.

Stand mixers are at worst a convenient avenue to regular tasks, and often make arduous ones more bearable, even if most of the things you can do with a stand mixer are doable by hand or with a hand electric beater. Whether it's worth it depends on how often you cook in ways that will utilize it and how much easier it will make that process for you. Whipping egg whites by hand is fucking annoying, whipping cream into butter by hand is awful and only marginally less so with a handheld electric beater. Beyond tasks that fucking suck without one, if you're needing to mix batter multiple times a week then it will be very convenient for you even if individual mixings aren't annoying. The bowl can be chilled and does not transfer much heat to what you are mixing, which is useful for things that require things to stay cold. This is technically true for hand beaters as well, but they are less powerful and so anything you're mixing will have more time to warm up.
You can use various attachments that let it become a pasta roller/spiralizer/meat grinder but the mileage varies on these and they would not be as good as dedicated tools for these purposes. If you're not picky about those things, it's nice to have the option available.
Unrelated to the machine's functioning itself, good ones can be pricey depending on your economic situation, and they take up a decent footprint in storage depending on your counter space and storage capacity. If getting a cuisineart or kitchenaid would break the bank for you specifically then it's not truly necessary most of the time.

tl;dr if you have the money and the counter space then it makes many thing more convenient or practical, so if you do those things and you have the money and space then consider it. If what you cook doesn't involve mixing or you're strapped for cash or storage space then stick with a hand beater.

>>21803976
It's comparatively lazy to employ a stand mixer when you can make due without.
>>
dough has been solved. why knead it?
>>
>>21804008
Gives you a better feel for the dough as it develops and it's enjoyable to do. If it's not particularly high hydration then it's pretty pointless to break out a stand mixer for kneading honestly, doesn't really save you much time at that point. If you can't be assed to take 5 minutes to work the dough by hand then that's your business.
>>
I got mine for free from a relative so the price of entry was 0 but when you bake it is very convenient but I’m not much of a baker so it just sits around most the time. If you bake a lot I would definitely have one but for me I wouldn’t have bought it if it wasn’t given to me.

>>

Great. If “you dont use them a lot” its because YOU dont use them a lot.

I use the pasta attachment every other day, i can make and boil fresh pasta in the time it takes you to cook dry pasta.
>>
>>21804069
Do you not rest the dough at all after kneading? If it's a smaller pasta shape you don't need more than 10 minutes or so to get a small pot of water boiled and then it's 5 or so minutes to cook dried pasta.

how come milwaukee can make an impact wrench that puts out looney toons torque, but all of these expensive kitchenaid mixers need plastic gears so they won't burn their motors out on bread dough?
>>
I make all my bread dough in my bread machine, so I really only use my stand mixer for things like cookies and masa for tamales. It's still nice to have, but it wouldn't be a top priority for me if I needed to outfit a kitchen from scratch.
>>
>>21803980
The laziness is implied by the claims of it being rarely used, i.e. these people aren't kneading with a stand mixer or by hand. Please read the posts you are replying to more carefully in the future.

>>21804379
>if you spend the money you will find reason to use it
I don't think it always works this way, depends on what keeps you from baking more often at the first place
it's also a weird motivation when you think about it, pretty much a sunk cost fallacy
>>
>>21804379
I don't assume that OP is any of those things or that he would not use something he buys. All we know is that he did specifically request to know bad things about the stand mixers in his post. Now you on the other hand, appear to be dumber than the average idiot on this board, which is saying something for the level of discourse here. You probably have a house full of retarded kitchen gadgets with that childish "oh but what if I maybe might use this one day" attitude. Mental illness on clear display. Counter space hogs that are useless unless you do the following:
1. Bake regularly. Cookies, breads, etc.
2. Want to make butter or other time intensive whipped items.
3. Want to use it for meat grinding
4. Want to use it for pasta making

It does not function well as an ice cream maker.

If you are a typical ck poster (a cooklet), you do not need one. Just enjoy your fast food slop.
>>
>>21804524
Ankarsrum's accessory lineup looks like they tried to copy KitchenAid's but forgot that their mixer is basically an electric lazy Susan instead of a stand mixer. Feels like they should have done a bit more thinking on those.
>>
unless you are really serious about baking, like more than just pizza a couple times a month, specifically baked items that make use of beaten components, or are committed to the food projects the attachments allow, it's probably not worth it. you could get several more impactful items for the cost of a standmixer. if you are specifically focused on pizza you would 100% be better off buying an ooni for the same money.
>>
>>21804008
Enriched doughs still need kneading to incorporate.
Hand kneading brioche sucks. I've done it a few times and its always a mess.
>>
>>21804122
Impact wrenches aren't made for steady loads.
>>
>>21803969
I have the small KitchenAid and it kinda just twirls the dough around in a circle without actually kneading it. So it never actually develops gluten and I have to do at least a few stretch and folds after to give the dough enough structure. Definitely not nearly as good as a big hobart machine I used in food service.
>>
>>21806443
bullshit. I have the same mixer and it works perfectly. skill issue.
>>
>>21803980
I prefer kneading by hand desu, except for brioches. Other than brioches I mostly use my stand mixer to beat egg whites, which could be done with smaller machines
>>
>>21806443
You probably need to adjust the bowl height.

https://youtube.com/shorts/d-xK2kYQgIU?si=bCuCe7HjGh4NjHRt
>>
>>21806746
didnt watch but that gay little adjustment screw does literally almost nothing. what you need to do is buy washers from the hardware store and put them over the little spikes that the bowl sits onto, THAT actually fixes the problem
>>
>>21803969
I have never gotten a good result trying to use these for breads or similar dough, but with pastries and mundane tasks it has always pulled through and done a great job. I can only imagine the attachments would be good but I'm not paying $100 for each one.
>>
>>21806746
Thank you, anon. I wasn't aware of this but I adjusted it properly now and will be baking on Friday to see if this fixes my occasional issue with the dough failing to knead.
I like using mine for baking pita bread, which is always better freshly baked than purchased from the store.
>>
>>21803969
I use it for mashed potatoes and cookie dough. Its amazing.

>>
>>21810803
>waaaaah why did they make fun of him for being an idiot
People with sports car money don't need to give a fuck. People without 300k-sports-car money max out another credit card buying their 12th needless appliance they probably can't afford and burn out the motor trying to knead a stiff dough on high speed then wonder why they get an eviction notice. If you're buying a specialty gadget just to find a reason to use it then you're probably too stupid to spend money unsupervised. Unmedicated bipolars rapidly burn through life savings, be it thousands or millions, this sort of attitude and the absence of someone to pull the leash. It's how lottery winners find themselves poor again in a few years.
>>
>>21811073

Is that why they buy a gaudy 300k car and have no taste and are stupid as fuck?

>>
>>21811135
People usually don't have good taste in many things. Most don't have good taste in a single thing at all. Rich people buy rich people cars and those can be good taste or bad taste cars depending on whether someone actually has good taste in that category. Being rich enables a person to explore taste in things more readily but that doesn't mean they're going to.
>>
>>21804106
What do you use them for 2-3 times a week? Seriously what werkday after work meal needs a standmixer?
But my opinion on the matter is
>i dont use it often enough
Is just a way of talking yourself out of something you would buy because you want to have it, and the once in a blue moon you would use it it would bring you joy so why not?
What are other things people do once in a blue moon because they bring them joy?
Thats right, hookers

This. They are the enemy of a tiny kitchen or lack of storage. Nothing is actually wrong with good appliances of course. There is a power and size difference in kitchenaids. You won't want both, so if yo plan to do dough, maybe spring for the more pricey model, which has the level to go and down. Mine is not that model. But the locing in bowl is great for really stiff cookie dough with mix-ins.
>>
>>21809960
Let me guess, it just stands there..
>>
I debated buying KitchenAid for months, because I only wanted it for once a week bread/buns and occasional pizza or pastry (not big on sweet bakes).

I haven't regretted getting it for a second, everything comes out faster, smoother, better.

Jfc this thread again
It's like any other tool
If you know how to use it, it's great
If you dont know how to use it, it's a very large paper weight
If you want to learn to bake, close the lid of your laptop and go get an entry level job at a bakery
And no I dont mean a cupcake factory that trucks in frozen shit 6 days per week
I mean a real, Viennese style bakery, making baguettes, bagels, maybe sourdough and sweet breads from scratch
Every day
Bright and early at 3/4am
Otherwise youre just a soccer mom watching youtube tutorials in your kitchen making garbage your family/friends pretend is okay to not hurt your feelings

>>
>>21803969
I really only use it for brioche, challah, and other breads where you have to integrate fat into the the dough which can take ages by hand. I'll also use it for whipping cream / egg whites though a hand mixer can do that it's just a bit more convenient in a stand mixer.
>>
>>21804122
This is an interesting question. However only the tilt models use the plastic gears. The lift models are all metal.
