Possibly one of my greatest Din Dins. Pork was in the oven for three and a half hours this afternoon whilst I watched the Darts World Championship and African Cup Footy.

Was falling apart when I was cutting it, very tender.

If you roast cauliflower in honey, you should damn well expect it to caramelize. Then you add some sliced almonds or similar and it's quite nice.
Again, I don't know how someone is dumb/lazy enough that they go through the trouble of doing all the prep work for a dish and then just not fucking cooking it.
You literally have NO color on the cauliflower, and guarantee it tastes like microwave-steamed vegetable with warm honey.

My issue was apples and honey vegetables both. I'd want one less sweet item, and something savory or tart for balance, maybe a nice bitter or sour chutney.

I'd agree with your 2nd assessment. Maybe tart cherries or cranberries, something along those lines.
Overall just too much sugar and not enough contrast either in the serving temperatures or the flavor composition.
