As a flavor enhancer. Works great in lots of different things. Technically speaking broths that have simpler amino acid profiles increase perceived umami, so I would say that dashi broth and dishes made with it is the best use of umami. It's kind of a goofy question. It is a primary taste so it would be like asking what you think the best use of sweet salty or sour is in food?
