This isn't "changing your epigenetic". There are genes associated with lactase production in adults. If you don't carry these genes then you'll probably have issues drinking large amounts of fresh milk. The same is true for starch with some people digesting it better or worse than others. It's nothing about doctors and drugs. It's that not everyone is meant to be consuming the exact same things and you shouldn't force something if it causes problems.
