DAMN

50/50 milk + sharp cheddar by weight. Add extra salt to compensate for the milk. Strain pickled jalapenos and blend them into the cheese. There's recipes for it. Tastes like an extra good gas station/movie theater nacho cheese. Delicious.

Cant u just add a little corn starch to smooth out and thicken the sauce?

god europeans are literally retarded. it's like if they made midwest facebook moms into an entire continent
>>
>>21814045
sodium citrate works similarly but affects the protein in a way that makes it even smoother. i can make good cheese sauce with starch but it's still never quite as smooth as it is with sodium citrate.
>>
>>21814054
What do you think is healthier for you:

Eating a sauce made with 100 added harmless chemicals

vs

Eating a cheese sauce
>>
>>21814046
>resemble melted plastic
i don't think it resembles melted plastic. it resembles a very smooth cheese sauce. where are you getting plastic from?

>free-radical cell oxidising chemical additives
it's sodium and citric acid. do you think salt and lemon juice is some abomination too?
>>
>>21814046
Actual cheese sauce has no milk or flour. You described Roux --> Béchamel --> Mornay which is pretty cool I guess with all the French faggotry. But its off topic and not even relevant to this thread about pure melted cheese sauce

sodium citrate is 100 chemicals
>>

Why can't you use salt and lemon juice then?

I've made a cheese sauce like twice in my life for lasagna so buying an ingredient specifically for them is kind of strange to me, maybe it would elevate a cheesesteak but again, kind of expensive to buy this just for one single thing I make once a year or so.
>>
>>21814114
it's not super expensive and it lasts forever, plus you only need a small amount of it. but yeah if it's not something you're making often then there isn't much point in worrying about it.
>>
>>21814106
The only potentially unhealthy or "bad" part of sodium citrate is the possibility of consuming too much sodium. Both sodium and citrate ions are essential for various parts of human biology. If you mix lemon juice(citric acid) and baking soda you would get citrate and sodium in solution(aka sodium citrate), retard.

>>
>>21814045
Sodium citrate chelates a calcium ion off of casein, the main protein in the cheese. This changes its molecular structure so that one end of it likes to interact with water while the other likes to interact with fats/oils. This lets you properly emulsify the sauce, like how egg protein lets you emulsify mayonnaise.
>>
>>21814173
When you digest it, the molecule disassociates into a citrate ion and three sodium ions. If you consume any amount of salt, citrus fruits, or anything with citric acid then you are already consuming these in substantial quantities.
>>21814292
Citrate supplementation is actually prescribed as a preventative treatment. Kidney stones form when calcium ions in urine combine with oxalate ions to form calcium oxalate which is insoluble, precipitates out of urine, and forms crystals. Citrate can compete with oxalate for binding with calcium, calcium citrate stays water soluble, and oxalate on its own is soluble so you're able to excrete all of them.

>>21815118
Some styles of mac and cheese like Caribbean macaroni pie do use eggs as an emulsifier. The tradeoff is that the end product is more set and sliceable so that can be undesirable if you're looking for a creamier sauce.

Also I wouldn't really call sodium citrate a weird factory substance, it's a very ordinary salt. You can make it yourself by neutralizing lemon juice with baking soda if you really want.
>>
>>21815124
I was actually just trolling and didnt think egg would work that way but thanks for educating me anon!
>>
>>21814069
>Why can't you use salt and lemon juice then?
You can. There are methods of preparation that use fresh citrus juice and sodium bicarbonate, which releases the co2 as bubbles and yields sodium citrate in aqueous solution. The potential issues are the challenge of dialing in the exact stoichiometric ratios so as to result in no excess of bicarb or citrus, and the presence of unwanted biproducts: sugars, acid salts such as sodium malate, bitter alkaloids and aromatic oils and esters that will remain in the final dish and be detectable to the palate, as >>21814101 pointed out.
Isolating pure sodium citrate mitigates these problems and lets the flavor of whatever quality cheese you use shine through. If you just wanted to turn a buttery & sharp emmental, or a rich grassy gouda, nutty mimolette, funky tallegio, etc. into a stable runny glossy sauce, you may not want the distracting aromas and bitterness of citrus invited to the party.
>>
>>21815188
>lets the flavor of whatever quality cheese you use shine through.

>>
>>21815197
It is not bullshit. Sodium citrate has a distinct flavor, but it is not necessarily bad or any stronger than using eggs, flour, or any other starch to emulsify cheese. It's just different.
You don't really understand how to use sodium citrate either and sound like an idiot getting mad at your own ignorance. Lol

They could have made American cheese before the US civil war if they wanted to, it's not some crazy industrial process. The thing that led to it actually becoming a thing is that around ww1 someone found a fungus that makes lemons ferment into way more citric acid than you normally get.

Normal people use sodium citrate to make homemade cheese sauces. It's not some newfangled hipster bullshit just because you haven't personally heard of it up until now. Hell, my now-73 year old aunt was doing it in the 90s after seeing it on a cooking show on TV.

I'm French. Every grocery store sells the local equivalent of kraft slices. THE most popular chesse product in France ( Vache qui rit ) is made with such salts. I make sodium citrate with sodium bicarb and citric acid and use it in my cheese sauces. You're on 4chan. The euro people you interact with here all have something wrong with them including me.
In real life no one gives a shit about sodium citrate. If even France doesn't care you know only the mentally ill care. Also the US is a depraved demonic entity. Cheers.

I don't know shit about cooking shows from the 90s, but plenty of mac and cheese recipes use sodium citrate indirectly. American cheese has a ton of sodium citrate in it and plenty of recipes will use a small amount to stabilize the sauce.
