I've memorized which settings on my induction stove get the temperature I want (4 or peanut oil, 5 for rapeseed oil), then test its progress with a flick of water to observe the leidenfrost effect at even the outer edges of the pan. Use as little or as much oil as you want, it just needs to cover the cooking surface in a small layer. I prefer to use the minimum, so I have to spread it around with a flat silicone spatula, but just tilting the pan around is enough if you use more. When it starts to smoke, immediately lower the heat so keep it hot but not constantly smoking, since that shit gives you lung cancer. Polymerization is a function of temperature and time, so if you can hit that sweet spot right below smoking and hold it there for a few minutes, you'll be set. Turn off the heat and let the pan return to the temperature you actually want to cook at, since the polymerization temperature is almost certainly too high unless you're doing some real violent sears. Wipe out excess oil and use fresh oil for cooking if you want, or just use what's in the pan if you're confident you didn't burn it. If you did it right, eggs or whatever else will slide around nearly as well as teflon. Don't expect the exact same behavior, since things that burn will still burn, and doing something like searing meat will still require dealing with the fond in whatever way you prefer. The polymerized oil will make it lift surprisingly easily with just a little liquid, even if it seems crusty and unsalvageable when dry.I personally find that peanut oil polymerizes more quickly and has great performance, but you can learn the right temperatures and times with whatever oils you prefer to use. I usually do all this while preparing other ingredients, since the only part that really requires attention is the temperature control immediately after adding the oil.
