Press closer to the edge when you first start shaping. Mine are still too puffy for my tastes but I'm getting better.

its the regular neapolitan pizza/multipurpose dough around 72% hydration, i think its the proofing container of the dough balls, unlike yeasted dough, sourdough especially above 65 hydration, probably should not be allowed to spread when proofing, the first dough ball fit tightly inside a perfectly cylindrical tupperware like pic rel so it stretched perfectly with minimum effort

Are you going for Neapolitan style specifically or just whatever works?
I do a higher hydration Focaccia style in a cast iron.
I think thats the pinnacle, I cant see how another style that involves kneading and dusting will be better, let alone desirable enough to justify the extra effort and inconvenience.
