Recent storm has caused 5kg of windfallen sour orange. I want to make marmalade but don't know how to can. for marmalade is the lemon necessary if not intended for shelf stable canning? and pith or no?give me your best citrus tips, how should I consume and preserve all these?
Can you make booze out of those or are they the wrong type of fruit to ferment?
>>21820972that's a fairly small amount of sour oranges for an average sized person, i'd say?
>>21820972I think the lemon is used to add some tangy while acting as a preservative, but i think that may be interchanged with pectin or citric acid.
>>21821029Yeah
>>21821038when thats the only fruit around, but neighbors trees are loaded with fruit. Calamansi are molding on the ground so I picked some. I have so many persimmons already.and for 5kg turned into marmalade, will be too voluminous. I lack space
>>21821128I don't say I'd WANT to eat it, but I easily could.
I'm just a sucker for citrus, this is citrus thread now. I am trying to candy these as slices but due to the thin peel and ripeness they are hard to cut without breaking. not very efficient, but they will store well which is a priority https://userealbutter.com/2009/11/19/candied-calamansi-limes-recipe/
>>21821038Hi movie blob
>>21821029You're probably thinking of scrumpy which is cider made with windfall apples.
>>21821319How does the peel lose its bitterness when candied?
>>21821322You're supposed to blanch or soak those peels beforehand. i didn't do it long enough, might have been my first time with navel orange peels. I usually do caracara.but that's also a question I have for the sour oranges.Calamansi and kumquat peels are not bitter at all. But the bitter syrup didnt turn out good because after the delicious sweet and sourness of the candied calamansi goes, bitter remains. hopefully when they dry, it will taste better. still have a few more rounds of them
>>21821029Oranges (and citruses in general) are not good for booze, they have a bitter unpleasant taste when the sugar is fermented away
why is this board full of slop? eat fruit and dairy, nature's foods!
wtf? these are not sour oranges these are bitter oranges they are practically inedible unless you add 3 tons of sugar and turn them into spoon sweet, you can only use them for their zest
>>21822934these have more sugar than 30 kinder bueno blended and cooked in syrup
>>21821347So how did they turn out? I dont know much about oanges other than there's varieties meant to be juiced and others meant to be eaten.
>>21823103well that would save some hassle>>21823113The calamansi are good
>>21823568Is it worth the effort if I have to seek the right citrus out? I’ve never made candied citrus but I love the taste, especially chocolate coated
>>21823103this, sevilla oranges are the equivalent of unpolinated male fig trees, they grow on their own and require grafting with something else in order to turn into something good
>>21823884many sorts of citrus peels or citrus are candiable, maybe all of them, but I've only done orange peels till now, definitely worth it>>21824304in spite of the bitterness they have a unique taste and aroma
Those look more like bitter orange, they're not great for juice but they are great for cleaning and tenderizing meat
>>21824775Supposedly the authentic thing for carne asada. They're unobtanium in flyover country so I'm jealous.
