Recent storm has caused 5kg of windfallen sour orange. I want to make marmalade but don't know how to can.
for marmalade is the lemon necessary if not intended for shelf stable canning? and pith or no?

give me your best citrus tips, how should I consume and preserve all these?

I think the lemon is used to add some tangy while acting as a preservative, but i think that may be interchanged with pectin or citric acid.

when thats the only fruit around, but neighbors trees are loaded with fruit. Calamansi are molding on the ground so I picked some. I have so many persimmons already.
and for 5kg turned into marmalade, will be too voluminous. I lack space

I'm just a sucker for citrus, this is citrus thread now. I am trying to candy these as slices but due to the thin peel and ripeness they are hard to cut without breaking. not very efficient, but they will store well which is a priority

You're supposed to blanch or soak those peels beforehand. i didn't do it long enough, might have been my first time with navel orange peels. I usually do caracara.
but that's also a question I have for the sour oranges.
Calamansi and kumquat peels are not bitter at all.
But the bitter syrup didnt turn out good because after the delicious sweet and sourness of the candied calamansi goes, bitter remains. hopefully when they dry, it will taste better. still have a few more rounds of them
