I got the big weston as a gift one year because I'd been eying the cheap ones. It's great. I'm glad we have the counter space for it in the pantry and a free drawer for the bags, though.

It's probably paid for itself by now but it's really more of a quality of life improvement - if you can vacuum seal steaks and chops, and have a grinder, you can buy subprimals and do your own basic butchering better than you can easily buy

My current goto recipe makes 2 pizzas or 1 bread:
1 1/2 cups AP
1 cup whole wheat
5 TBS dark rye
1 tsp salt
~1 3/4 water
1/2 cup sourdough starter

You can easily just make an 100% AP flour bread with yeast, same style.
I first made Emma's Roman Castles bread, modifying it after learning how to make sourdough, using a cast iron instead of a dutch oven:

The only reason why you'd use cast iron is for heat retention. It's completely unnecessary unless you want to keep something warm and don't have an oven or aluminium foil to do that.

On top of that iron is poisonous. And it reacts with water (it rusts): only a retard would use beer, wine or vinegar in a cast iron pan.
