Just got a giant bag of mushrooms from my job for free. What the fuck do I do with them?

Mushroom, green pepper, white onion (cut long and thin), and maybe some pepperoni. Ideal pizza.

I really like to make my own burgers with 70/30, some Pappy's seasoning mushed in with the meat, cook the burgers in a pan and then cook mushrooms in the juice left over from the burgers. Slap a slice of swiss on there too. Mushrooms love to soak up liquids, so I will cook the mushrooms on the side of the pan without juice first while the patties cook, then when the patties are done, move the mushrooms into the juice until nice and soft.

I like to saute them with onion and garlic in butter, once it's soft I blend it with some tomato puree until smooth, season it with salt and sage. Tastes good on pretty much anything.

Works best on stainless steel pan
>Sear the mushroom slices till they're golden brown and smell almost nutty
>take the mushrooms out and sweat finely chopped onyo (it can get some color too)
>throw some really finely chopped garlic till fragrant
>deglaze with white wine (stainless gives best results at this stage)
>add a bit of chicken stock or even chicken boulion cube with a bit of water
>add heavy cream and the seared mushrooms, reduce
If you're brave enough throw some grated hard cheese (parmesan/grana padano) and if you're really brave, a bit of blue cheese.
Ideally serve with tagliatelle pasta.

In the fridge in a brown paper bag. The paper absorbs the moisture from the mushrooms and keeps them from getting slimy and gross. If you don't use them soon enough they'll get wrinkly and dry in the paper bag instead of slimy and wet like they do when stored in plastic.
