Tri-tip, seasoned 36 hours ago.
Three corn tortillas, an avocado, two mushrooms, baby sweet bell peppers roasted last night. An onion will join later. This is my O.M.A.D. since I've been busy all day and now it's late.
Olive oil and butter.
Fresh tortilla chips.

Don't worry, schizos! That's 100% rendered beef tallow I'm frying my chips in.;)
And by standing the steaks on their fatty ends we're rendering even more beef fat to cook everything else in. No pouring it off or sopping it up with paper towels. Here we eat all the fat. And that's how we keep from becoming fat.

The "downside" (which it isn't for me as I'm just a guy at home and not a steakhouse) is some irregular slabs near the end of the cut.That's why I'm making it into what I'm making it into.
These were tossed in salt, olive oil, and fresh cracked pepper and blasted at 425f last night.
Julienned with the seeds and all. "Rustic-like". We're not fancy here. That's at the real job.

These cuts are better at med rare and above I think, and that's what I've done. I certainly don't consider that a lot of effort. Maybe 12 minutes start to finish. I prep and chop lightning fast and the burners heat pans up fast. As for mediocre, it doesn't taste it. Seasoned beef seared nicely, fresh guacamole, hot chips... lol, I guess it doesn't do it for you. Fair enough.But thanks for weighing in.

With chips and stuff I'd have been fine with well done honestly. I just always feel somehow that it's a waste of good beef. But tomorrow for sure some of it's going to get cooked well done. Maybe a stew or something.

I never participate in those "How Do You Make Your Coffee" threads.Here's how I make my coffee.
Push and twist.
Heavy cream.
Half and half.
Unsweetened vanilla almond milk.
Small splash of whatever flavor I want. At a coffee place it'd be a "half pump" worth.
Then I microwave it for about 90 seconds until it boils. I don't usually want to bother with the steamer wand, but if I do I just do it directly into this cup.
Then I end with the espresso going directly into the cup.
A "whisper" of cinnamon. That's it. Easy and all in the one mug. I have 2 or 3 of these a day.
Decaffeinated beans of course.
Keep going friend, you'll improve in time. Maybe lay off the weed as it impairs judgement

I don't like my sauces touching. I know the paper bowls aren't classy, but I cut down on doing dishes when I can. Also, I reuse them. This will be obviously the last use.
So the one on the left there is an example of a bowl I can use a couple times like that. Nothing wet or gross in there. Got my surf and turf, a cappuccino, and some nuts and cheese action. I'm set.
