I just made wings with baking soda instead of baking powder. They tasted terrible.

The kenji wing recipe pretty much works - it does crisp up nicely in the oven - but even if you don't make any of the easy mistakes (wrong salt, wrong powder, wrong butter) it is right on the boundary of edibly salty. If you make any of the easy mistakes it's terrible. Also his sauce is weak; use the ratio from Frank's for your sauce.

baking powder is just baking soda mixed with an acidic element (usually cream of tartar) that makes it react when you add it to wet ingredients and produce carbon dioxide as a leavening agent. If your recipe has enough acidity, baking soda will work just as well.

They're dirt cheap but imagine "making wings" when you could make legs for the same dirt cheap price and there's less fussing per ounce of meat. Wings are made for stock.

Nope. Just absent minded. It was an accident, not intentional. I would've added some lemon juice or vinegar to my seasoning mix if I knew before I put them in the oven.

I've used baking soda for all those baking powder on chicken skin kind of recipes. You just use less and you need to mix it thoroughly with other dry ingredients so a clump doesn't make a bitter spot
