this shit is not convenient
>>
Stop trying so hard to make 'stir fry' and just be happy with the soy sauce sloppa over rice that you can easily whip up.
>>
>>21828668
You need a wok, nigga
>>
>>21828668
>heat oil in wok
>throw in ingredients in descending order of cooking time
>add sauces n shit
wow
>>
>>21828700
>blanche meat because otherwise it will stick or you cant slice it thin enough
>+clean up after that
>have to oil the pasta because otherwise it will stick or be soggy + clean up a plate after that
>have to fucking dry every ingredient notably today peas from a can
>cutting shit takes way too much fucking time but i guess i just have a small cutting board
>take like 6 things out of the fridge just to make sauce (i guess i could have a base soy sauce and store it)
i'm so fucking tired
>>

You did literally everything wrong. I'm almost impressed with how you didn't manage to describe even a single step that would result in a good stir fry.
Canned peas? Jesus.
As for "making a sauce", do you not know how to make Chinese brown sauce? It's the easiest shit in the world. Just put a little soy sauce, a Chinese chicken (or pork) stock cube, some water, some sesame oil, mushroom seasoning powder and some cornstarch, in that order, into a jar and shake. Dump it out into the pan near the end of cooking the stir fry and smush the stock cube to dissolve it. That's it. Some people also add sugar. I do not.
White sauce is similar except it simply omits the soy sauce and usually goes with seafood and ginger-and-scallion dishes so the stock cube tends to be fish or shrimp. Chinese curry sauce is white sauce with curry powder added.
Red sauce adds ketchup or chili sauce.

t. terrified of high heat cooking, terrified of oil
>>

this
>>
>>21828718
>blanch meat
No, you cook it and it will stick, but then it will separate from the pan and you will enjoy a nice sear.
>>
>>21828798
As one should be, metaphysically on many levels.
>>
I made stir fry today because of how convenient it is
meat, veggies, onion garlic, soy sauce oyster sauce white wine
gets rid of whatever the hell is left in my fridge and it just works every time
>>
>>21828668
Its just tossing and stirring meat and veggies in a pan. How much more convenient can it even be? Its so goddamn low effort.
>>
>>21828668
only thing I don't like is the amount of smoke this shit emits, assuming you have a proper wok

I even made a thread crying about this https://warosu.org/ck/thread/21797248

i had oil explode after i added frozen peas which were already dried and i have a permanent fucking mark on my arms the fire was like 1 meter tall
when i got into high heat cooking and didn't have a feeling for temperature i evaporated a fucking egg white i have literally 0 clue how but i did
i'm not a fucking pro i don't need cooking related injuries and more than that i dont need my food to stick to the pan
>>21828728
>canned peas
i have literally never used them before and they were fine i dont know what your problem is
>Just put a little soy sauce, a Chinese chicken (or pork) stock cube, some water, some sesame oil, mushroom seasoning powder and some cornstarch
that's 6 fucking components you retard i said it takes a lot of time and you didnt even add ginger or any vinegar or anything sweet it literally takes like 3 minutes to just make that sauce and put everything away
i'm not dumb enough to not be able to make a fucking sauce it just takes a long time like what you described is exactly the problem, i dont even know what corn starch does, food is coated either way it's just annoying to add because it clumps and doesnt dissolve
>>21828811
if you slice thin enough or velvet it will not release and stick to the pan
in chinese restaurants they shallow fry meat first which is convenient if you have a round bottom wok
i could cut it into chunks but i dont like eating them
>>21829195
i know that if you polymerize the oil food will stick much less but i'm not eating or smelling fucking aldehydes so i'd rather have it stick than eat poison
people who cook usually dont give two fucks about what's healthy but i do. it's fucking nuts to me that people recommend you to have the oil smoke
>>
>>21828671
Yup, quick lazy sloppa is good enough for me.
>>21828728
I should try this sometime. DESU I typically just use store bought Teriyaki sauce.
Occasionally I'll make my own Teriyaki ... when I've already started and realize I don't have any in the fridge.
