Depends on the piece.
Nigiri orders come in a pairs a lot of the time, so I always try it without adding soy to see if it actually needs it as the chef served it. If it needs it then I run it fish-side down in the soy sauce so that it gets as much as I want added.

It's acceptable to go fish-side down and it makes sense to do it like that because the rice would soak up more than you probably intend. A lot of jap etiquette is fucking retarded but I get the reason for that. Either way I think it makes sense to taste some of what the chef puts out before altering it because it might already be right.
But I'm absolutely gonna look to the temple's protector for his blessing first. If he gives me the ok then I dip away. If he gives me the no then it's a low bow and I will sudoku myself.

I like it mixed with other stuff, or as an ingredient in the cooking process, but it's kinda nasty on its own. I've seen people pour straight soy sauce on rice and that shit is appalling. I'm not weeb enough to enjoy straight up plain white rice but it's pretty much always served with something else you can put on top of the rice or mix in with it that'll make it good without resorting to dumping fucking soy sauce on it.

A japanese friend of mine told me that unlike the US, a lot of sushi is made with unfrozen fish in japan, and that you're expected to use wasabi mostly to kill bacteria and parasites. Looking it up online gives me tons of different answers though, so who knows.

What I hate when going to buffets is they put the fish on top of a ball of rice. DONT ALWAYS DO THAT! Leave some just as sashimi (the fish). I hate having to take a bunch of sushi pieces and stuff the balls of rice between the booth and wall. It's a pain in the ass enough having to pick all the shrimp out of the seafood casserole, all the beef out of the beef and broccoli and a few other dishes if I am trying to eat healthy.

Same anon you responded to here, I did a little research. (My apologies for reddit spacing, I believe it will increase readability in this instance).
The cutting technique is called sogi-zukuri.
Perhaps I'm wrong and the lip on the fish isn't supposed to be there. Because when cut there is supposed to be "Yane" 屋根 or the roof to catch soy sauce. But I'm not certain if it's just supposed to be an angled flat piece or a ridge.
We need a Japanese in here!
