Just some Atlantic crap from the store. Not worth doing anything with but smoking. In fact, it kind of stinks. Right on the edge. Sell by date is tomorrow. I didn't get a discount or anything.

They didn't scale this very well if at all. I guess I have to do everything.

No pinbones though. So someone did something. That's probably why it stinks. Sitting out for too long while some schmo slower than me picks bones while the fish is not on ice.

If it didn't stink I'd roast it in the oven and eat it. Belly strip is my favorite next to the tail and cheeks. But it reeks.

So this is how I do it. I make little fillets and then score them so there's more surface area and the brine penetrates faster as does the smoke.
My Little Chief is barely holding on. It's rigged up with electrical tape and the door is gone and the wood chip pan burned through long ago.
So I will be using a tuna can full of chips and keeping a close eye on it. Takes most of the day if I keep rotating it so each rack gets some time near the bottom.
I like having something that barely works and yet always produces great smoked fish.
Because of course you can just do this out in the woods or near the beach with no equipment at all.

That's it for now. Fish needs to soak overnight and then sit uncovered without brine to form a "glaze". And only then will it be smoked.
My friends don't even know this is coming. I always give a lot of it away. It's so rich I can't eat it all.

Thank you. Chopping up fresh onions and garlic for a brine would be far less effective for what I want to do here. I ALWAYS have garlic and onions on hand. I use them in almost every dish. If they're not in something it's on purpose.

I pulled this out of the basement freezer. Nearly a year old. I'm going to thaw it out and roast it up. I have a shaker of some "smokehouse bbq maple" salt blend that I don't really know what to do with. I could bury it in my old rub mix.
I could put this in the smoker too, though it's not the kind of smoker that gets really hot and cooks anything.

I know you're trolling, but it would be wrong to waste food. That's not respecting the life of the salmon which was taken from the ocean to be food. I openly admitted from the start that it was not fresh and had a surface odor. I rinsed it and at that point it would have been fine to cook well done and eat. But I bought it for the express purpose of smoking it, and it's totally okay for that. I've returned fish in that condition before, but I know they just throw it out. It would be safe to wash it and cook it and use it for something immediate, but a business wouldn't, and shouldn't be that way. Rotten fish that makes you gag should totally get tossed. It's sad when it's not properly cared for and used in time. This wasn't that at all.
But even for smoked fish I'm just going to buy from the fish counter from now on. This was off to the side with the cocktail sauces and jars of oysters and the shrimp platters and smoked salmon in a separate grab-and-go seafood case. That's the issue right there, that it's not on ice. It's just in an open fridge display basically. Come to think of it they shouldn't even keep raw fish like that over there. I'm going to scold them for it next time.
But it's the same price as what they have in the back so there's no reason not to ask for a few pounds off the ice except if you're in a hurry.
I've learned my lesson here.

Yeah, it did when I rinsed it. Everyone got the wrong idea like I was dealing with rotten fish. And after 24 hours in a salty marinade I couldn't tell it from something fresh caught. It turned out great. I did learn not to get fish from that little section again, though in the past I had and there wasn't any odor issue. I'd like to think if I'd have bought it for making sushi or something that I'd have returned it, but again, I know they'd just throw it out, so I probably still would have smoked it and gotten some use out of it.
I hate how much food is wasted when there are hungry people out there.
