How do you make your meatball /ck/

This is my current recipe but I'm not particularly floored by it.

2 lb ground beef
1 lb ground pork
1 1/2 onion minced and cooked in tallow
2-3 cloves garlic grated
2 eggs

3 oz breadcrumbs
6 oz Buttermilk

1.5 oz parmesan
3 tb ricotta

1 tb Worchestershire sauce
1 tb soy sauce
1 tb red wine vinegar

1/2 cup fresh Italian parsley
1/2 ts red pepper flakes
1/4 ts MSG
1 tb fennel measured whole, cracked
1 1/2 ts dry oregano
1 ts dry basil
1 ts fine sea salt
1 1/4 ts pepper

Wups, the amount of salt listed is wrong. It'll probably take more. I always microwave a bit of the mixture to test for salt level.

I mix mince and breadcrumb and eggs and whatever herbs and spices i got lying in my pantry. made the perfect meatball a few years ago when i was drunk but can't remember the recipe, pretty sure i put cheese and cilantro in there.

Yeah same. I've tried all manners of frozen and even raw packaged mætballs from various grocerymarkets and they were all absolute dogshit. And they're always sneaking the cheapest cuts into them so you gets bits of bone, cartilage, and cracked pig teeth your fucking meatballs. It's the western equivalent of eating chinese food

If you go to BJ's (worst bulk purchase store but whatever) these are the best I've tried. I'm not saying they're amazing but they are significantly better than the average frozen meatball.

We don't have BJ's here (well we have a restaurant chain not a wholesaler) and I can't find that brand anywhere in the Pacific Northwest.

The search continues I guess. Or probably not since why bother, they're all shit and I've not been shown otherwise.

I prefer my meatballs firm and meaty with little to no filler.

i fell out of love with meatballs for a long time, but recently became aware of tiny meatballs/polpettini
haven't made them yet but this seems way more appealing for a 'ghetti

I looked these up and as I suspected they have soy filler. it seems like almost every brand of frozen meatball as well as most of the ones you'll find at shitty restaurants have soylent in them.
