How do you make your meatball /ck/
This is my current recipe but I'm not particularly floored by it.2 lb ground beef1 lb ground pork1 1/2 onion minced and cooked in tallow2-3 cloves garlic grated 2 eggs3 oz breadcrumbs 6 oz Buttermilk1.5 oz parmesan3 tb ricotta 1 tb Worchestershire sauce1 tb soy sauce1 tb red wine vinegar 1/2 cup fresh Italian parsley1/2 ts red pepper flakes1/4 ts MSG1 tb fennel measured whole, cracked1 1/2 ts dry oregano1 ts dry basil1 ts fine sea salt1 1/4 ts pepper
>>21844112With love :3
>>21844126Wups, the amount of salt listed is wrong. It'll probably take more. I always microwave a bit of the mixture to test for salt level.
>>21844112Pound of ground meat (pork or beef)Salt, pepper, egg, no bread crumbs. Dried herbs as I see fit I have no desire or need for exact measurements I save that shit for when I'm making the sauce, I wing it with my balls.
>>21844112I microwave frozen italian meatballs.
>>21844112I buy them frozenThey aren't worth the time to make them and they last in the freezer for like a year
>>21844112I mix ground beef with a random amount of breadcrumbs and an egg or two. Sometimes I salt it

>>21844235Who the fuck would clip this?
>>21844256what do you mean? should it be longer? isn't the short quotable quote zippy enough?
I like turkey meatballs
>>21844231this. meatballs are a meatloaf tier waste of ground beef.
>>21844112by telling my girlfriend thats what i want for dinner
>>21844112I mix mince and breadcrumb and eggs and whatever herbs and spices i got lying in my pantry. made the perfect meatball a few years ago when i was drunk but can't remember the recipe, pretty sure i put cheese and cilantro in there.
>>21844231What brand? I have never tasted a frozen meatball that wasn't complete shit. And I'm not picky, I eat $1 pot pies and store brand soup cans.
>>21845208Yeah same. I've tried all manners of frozen and even raw packaged mætballs from various grocerymarkets and they were all absolute dogshit. And they're always sneaking the cheapest cuts into them so you gets bits of bone, cartilage, and cracked pig teeth your fucking meatballs. It's the western equivalent of eating chinese food
>>21845208If you go to BJ's (worst bulk purchase store but whatever) these are the best I've tried. I'm not saying they're amazing but they are significantly better than the average frozen meatball.
>>21845264>BJ'sdamn I haven't heard that place mentioned in yonks, takes me back to my MA days
>>21845264We don't have BJ's here (well we have a restaurant chain not a wholesaler) and I can't find that brand anywhere in the Pacific Northwest. The search continues I guess. Or probably not since why bother, they're all shit and I've not been shown otherwise.
>>21844112Ok... I am a crazy man. I have been making salami, can I just cure my meat balls? I am thinking maybe press them into little patties and cure them on a rack. Put a little logo on them with a weight. How crazy am I?
I prefer my meatballs firm and meaty with little to no filler. >400g minced meat>1 bag onion soup mix>maybe some chili or garlic powder if I feel like it>mix soup mix into a bit of water to make a paste>hand mix the meat and the soup paste together>pan fry or bake in oven if lazy
>>21844112It's important to make meatballs
>>21844112I don't know how
I dont care about your recipes. I care about technique. Is there anything more convenient to get perfectly browned balls than an airfryer?
i fell out of love with meatballs for a long time, but recently became aware of tiny meatballs/polpettinihaven't made them yet but this seems way more appealing for a 'ghetti
>>21852856>tiny ballsmein neger
>>21845264I looked these up and as I suspected they have soy filler. it seems like almost every brand of frozen meatball as well as most of the ones you'll find at shitty restaurants have soylent in them.
