And the filling is mashed up potatoes, but not actual "mashed potatoes" potatoes, there's more texture: more like crushed potatoes than mashed. And they'll have other additions such as paneer cheese or chili peppers. It's served with a side of a spicy vegetable soup called sambar (similar to chinese hot & sour soup) which you're supposed to dip it in, like when you get a french dip sandwich's au jus.
