And mint chocolate chip sourdough discard cookies. It's supposed to be unfed, but I like it active. Makes the cookies "fudgier". I use this recipe.

Phenomenal. I looked at several other related recipes like mint cookie or brownies and the they all called for the same thing. It's hard not to eat them. Same with the cinnamon rolls. It's like the cinnamon roll version of a maple bacon glazed doughnut. Next time I make them I'll add some crumbled bacon to the filling. I already substituted some of the butter in the dough for bacon fat.

The stereotypical sourness of sourdough is due to cold fermentation (ascetic acid production) which makes a vinegary tangy flavor.
Room temp fermented sourdough is milder and sweeter with more balanced flavor.

Wrong, you're comparing instant-rise yeast breads with long-fermented sourdough. If you ferment your yeast bread for 24+ hours you get all the same benefits of sourdough. With none of the gross odors or ridiculously thick, hard, inedible crust or wet nasty crumb.
