>>21851229Putting it on a pan makes the bottom not crisp up. I don't think my oven grates are really dirty since otherwise nothing except the bottom of pans touches them. They do sell pans with holes in them for pizza but I don't think they're very widespread.

>>21851229Because the fucking DIRECTIONS tell you to. All the good pizzas go directly on the rack. And most of them somehow manage to not leak off the edges. I still put some foil on a lower rack just in case.
