Yes they are double fried, first boiled then freezed and then a double fry.

Make sure your oil is hot enough though because I fucked up the first batch.

I try to fry in the heaviest vessel i have now (a cast iron dutch oven) to try and prevent the temp from dropping too much when I do fry stuff

Boiling is done so they get brittle and when fried you get those crunchy bits at the end. I freezed them because I boiled them the day before so they are ready to fry, but you have to let them steam out before freezing.

Yeah exactly, when they are frozen the temp drops too much and they start to disintegrate if your oil isn't hot enough (which happened with my first batch).

I did it a bit differently, I boiled them for 15 mins on higher heat, let them steam out for 10 and then freeze em, then fried the next day with 10 mins between the frying. But yeah it's a whole thing. They were good though.

The only thing is that you might overboil them, it's a real fine line between making them brittle and them becoming mush, so make sure you cut them thick.

I made a lot of them so I have two more batches in the freezer at the moment. Tbh even frying them once will still be good. I just wanted to make em like him to see whats up.

i dont think i've ever bought ground beef since we basically don't eat beef in poland outside of kebabs
it was great, i've made pickled onions and i'm gonna try them tomorrow
i added cheese, lettuce, tomatoes and fresh cucumbers, thought about onions but cba, not really sure what else i could put in
it squirted when i bit into it but it didnt disintegrate and toasted buns definitely helped

Interesting although European countries mostly eat pork and chicken. In my country the most common ground beef is a mix of beef and pork and that's how people consume it and they might make a beef stew once every week or two.

I do like Polish sausage though, when I lived in Greece for a while I was going to this Polish butcher/store and the meats were imported and everything tasted great. Same with a Czech store.

The meat for this burger was a bunch of cuts I chose that I told the butcher to turn into ground beef, it's good like that because you chose how much fat goes. I told him 80/20. They also sell beef tallow which is very tasty but a bit expensive, they also sell chunks of beef fat that you can render yourself which is much much cheaper, I've done that a few times.

i bought beef tallow and used it, smell is kind of like sweet but the smoke point isn't great
you never really see any beef but i started shopping at auchan which is very french supermarkety and not really adapted to local markets and they have cool stuff like cheap parmesan and that sort of a jelly isle that you don't see anymore

Even if you see some smoke don't worry, the good ting is that it doesn't degrade and oxidize like seed oils.

Recently I read some studies on olive oil and it turns out even virgin olive oil despite it's "low smoke point" doesn't degrade and stays stable even after multiple uses, I think the same goes for animal fat when rendered.
