Is your dad a griller, /ck/? My boomer dad has five grills and smokers and is terrible at using all of them.

My dad used to grill a lot, now I grill a lot. All you need is a Weber kettle unless you are cooking for a ton of people. Those Big Green Eggs are nice, they hold heat amazingly well, but are so expensive. It's hard to fuck bbq up on them though.

Wood and charcoal take considerable prep and time to get going, then hot ashes need to be disposed of
Gas is on and preheated in 10 minutes and leaves nothing to clean up
For practical daily meals it's a no brainer

My dad grills but my mom refuses to eat ground beef unless it's well well done so burgers come out dry and shrink into meatballs. They're also not seasoned at all. I'm trying to get him on smashburgers so they're still cooked through but are at least the right shape and still juicy.
He also prefers to count exactly how many patties he needs and cooks them all at the same time. Instead of putting them in buns he loads them on the same plate and lets them get cold while waiting 30+ minutes for my mom to finish the 4th last minute salad.
I would never invite friends to the family grill but at this point the taste of cold, dry beef and the sight of a souplantation's worth of salad on the table feels like home.

Trick with well done patties is to use a higher fat mix, gently form(no mixing or stirring the ground meat) them into patties and then low and slow. Season generously with S&P on the exterior only. 225 for an hour with some hickory or oak smoke. No sear, only indirect heat.
They'll stay moist, be fully cooked throughout with no pink, and remain nicely soft. When I do bulk burgers for a party I always do this method and they're a hit.

I agree higher fat mix is important for keeping them juicy. My dad likes 90/10 but I have a plan to grind my own beef and mix in 25% fat. I'll bring premade seasoned patties to the next bbq and ask him to "grill it proper" since I'd clearly ruin it grilling it myself. If people like it I can be the new beef source for bbqs.
Suggesting temp and searing technique might be stepping on his toes too much. I'll have to slow roll him on the idea of indirect heat.
