Instead of putting them in buns he loads them on the same plate and lets them get cold while waiting 30+ minutes for my mom to finish the 4th last minute salad.I would never invite friends to the family grill but at this point the taste of cold, dry beef and the sight of a souplantation's worth of salad on the table feels like home.

>>21856174Trick with well done patties is to use a higher fat mix, gently form(no mixing or stirring the ground meat) them into patties and then low and slow. Season generously with S&P on the exterior only. 225 for an hour with some hickory or oak smoke. No sear, only indirect heat. They'll stay moist, be fully cooked throughout with no pink, and remain nicely soft. I'll bring premade seasoned patties to the next bbq and ask him to "grill it proper" since I'd clearly ruin it grilling it myself. If people like it I can be the new beef source for bbqs.Suggesting temp and searing technique might be stepping on his toes too much. I'll have to slow roll him on the idea of indirect heat.
