Franchising means less direct control. For a not publicly traded mom & pop's, the paperwork and accounting bullshit ain't worth scaling up + the risk.

They had a territory based franchising model that gave a good bit of freedom to each region. Bob's was different than Shoney's which was different than Frisch's. Over time, the Big Boy name became less important than the regional franchise name, so some of them like Shoney's broke away from the system to go it alone. Big Boy's panicked and started getting overly controlling with the remaining franchises. Around the same time, lots of fast casual chains popped up that better suited modern dining trends. Big Boy's was seen as a place for old people and followed Howard Johnsons into a death spiral.
The current Big Boy locations bear little resemblance to the old chain. They're far more casual now, trying to balance getting some older customers with the legacy name with getting younger customers interested in easier dining.

Huh. I once went to a "Big Boy" restaurant in suburban Detroit, like in Novi or Livonia or somewhere like that, and had their equivalent of a Big Mac. Way better than McD's, honestly. They had some mac n cheese that was also ok. Wonder if there's any connection between these places. This one wasn't called Bob's.

I used to go to the Burbank one and it was both pretty decent and really reasonably priced, like $12 for a Big Boy combo that came with a salad, burger, and fries. Shit was probably all over the place with different locations though.

Though not obvious at the time, Big Boy seems to have made a mistake in letting its regional franchisees make their own name prominent and to deviate too much from the core offerings. My first employer was Barpeg Enterprises, but you know them as Burger King. They owned a bunch of Burger King locations in central Alabama but as a customer, you'd never know the name of that company, you only knew you were at Burger King. Contrast that with Big Boy where the franchisee name was so well known, people often used it as the name when speaking to each other. When I was a kid, people would talk about going to Shoney's after church, not Big Boy's, even though at that time they were still a franchisee. Same for my relatives in the Midwest.

I think generally the problem with diners is that American tastebuds, and generally this is happening everywhere, are simply becoming broader and that's leading to less space for places that serve that midcentury version of American food.
And once there's less market space in there for that food you're in competition with Burger Chains and Sandwich Chains that do faster, bigger sandwiches cheaper in smaller locations and frankly, less people are eating burgers for lunch because they have the choice of Burritos, Pad Thai, a Kebab Salad, Quinoa Bowl or Ramen Bowl instead.
Frankly in 1980 you were less likely to have every one of those options near you, but today you pretty much had all of that and more.
