The big cities are like any big city anywhere, 99% is utter horse shit wannabe slop, catering to tourists, students' knack for the next fad or businessmen that don't have time. There's always a few family-run restaurants where you eat well for a very decent price. You won't find them on Tripadvisor.
East Germany still hasn't overcome the Communist era.
Black Forest is top tier.
Any region that has rivers and/or wine farming is top tier.
You eat very well in moderately touristic regions which don't really appeal to the modern Instagram public like Hochsauerland and the Eiffel.
In southern Germany you really have to know where to eat, it's hit or miss.
The seafood is underwhelming. Trout dishes are simple but fantastic.

Serviceable. Most of the higher status stuff is french-influenced though. Traditional german dishes are often just slightly uninspired, like the cook went "ok, we have four main ingredients, that's enough right?". Still tastes good within that constraint.

This. Riesling is the best winen, also the cuisine in the Mosel region is stunning. Lots of variety. For me, it's a glass of dry Riesling with a slice of fresh bread and a plate of cheeses.

Nobody will spit in your food if you don't speak German but especially in restaurants serving traditional German food you shouldn't expect them to speak English too well. As long as you just order some shit from the card you will have no issues at all. Many words are close to English or French anyway.

Literally everything European is massively French influenced because France was the superpower for like 1000 years and had like 10x the population and economy of any other country. A huge amount of European countries were ruled by French nobles with French customs. Its somewhat overstating it but not really. France in 1500 had around 16 million people living in it while Spain had 8 million, England had 2 million, major HRE states like Bohemia and Austria had 2 million.
Between the Capets, Valois, Anjou, Angevins, Bourbons etc there were French nobility in Spain, Portugal, England, Scotland, Netherlands, Naples, Sicily, a bunch of minor Italian states, Hungary, Croatia, numerous HRE states and more. The effect of this is that court culture throughout almost all of Europe was very French. Subsequently all "high class" cuisine in every European country will have French influence. Its not a bad thing, infact its just a dumb thing to point out in disfavor of a countries food. Saying something is bad because its similar to French cuisine is like shitting on various Asian cuisines for being similar to Chinese.
