Cookies are simple, anon. At the most basic they're an emulsification of flour and baking soda with fat (butter), sugar, brown sugar, and vanilla. If you want to do plant based then you can use crisco or natural peanut butter as the fat and a shit ton of corn starch as the emulsifier (instead of eggs). How you go about baking the resulting dough is up to you.

I never tried it but it's supposedly a common thing in the Midwest and people I know who've tried it say that it's both pretty great and surprising I'd never heard of it before then.
