i get 1kg frozen berry mix for ~4€ at Aldi
that's enough for about 1 week

even the fresh fruit when in season (admittedly that just 3-4months/year)
it's like 6-8€/kg for mixing it yourself with fresh berries

and if I feel fancy I can get the organic frozen ones for like 8-10€/kg depending on which berries

As someone who has made strawbree and raspbree sauces for custard and cheesecake and the like I must say you likely do not need any cornstarch. if you really struggle with runny sauce use arrowroot to thicken it, much nicer and finer for a fruit sauce, won't make it cloudly, just makes it super shiny and adds no flavour of its own which is nice.

BUT really, you should just be able to reduce it down to a nice syrup. Are going to to strain and press to make it an intense syrup or just leave the chunks in NY cheesecake style?

Pic is a couple sauces I made, straberries just simmered and rasperries simmered and strained. The dark raspberry sauce was pretty intense stuff

Berries are delicate and prone to spoilage, frozen results in a lot less waste which is probably why they're cheaper. I've noticed other frozen fruits and vegetables can be more expensive than fresh. And frozen is said to actually be more nutritious sometimes because things will be picked when ripe and then frozen, whereas fresh produce is often picked underripe and can sit on the shelf for a while both of which result in less nutrients.

freezing does not destroy any vitamin or minerals
even better, it preserves them
and while fresh produce takes days / weeks to get from harvest to you
frozen stuff gets frozen usually just hours after harvesting, which preserves the nutrients a lot better

frozen produce is cheaper because
it's usually produced at the production height, so peak season when prices are low
and because it can be transported longer distances, so from cheaper countries
e.g. most frozen raspberries in the EU are from Serbia (with some of the lowest wages in Europe) while fresh ones are from Poland, Germany, Spain etc.

they are also EXTREMELY easy to grow yourself, given you live in a place with some kind of yard. particularly raspberries and blackberries, they are basically like wild weeds, i put just two branches of raspberry and two branches of blackberry around my fence 3 years ago and now they are growing out of control if i dont cull them now and then...
its cool to just pick a handful of those whenever walking buy, i love em, my only issue is, they NEVER fucking get ripe at the same time, so you gotta follow them closely, or just pick the few that already are and eat them on the spot, they are kinda shit when preserved, at least i dont like em

if heard blueberries are pain in the ass to grow tho, never tried em

one big reason for both is also because produce varies widely from batch to batch and over time

Compared to fruits, frozen berries are pretty cheap. 4-6 €/kg is really not expensive. Even fresh berries can be in that price range when they are in season. I bought blueberries for 5 €/kg. You probably think of berries as expensive because for most of the year you see the prices for when they are not in season.
