no, fresh pasta and dried pasta do not taste the same. artisanal dried pasta using high quality flour, cut with a bronze die and slow dried will not have the same flavor or texture as a mass produced dried pasta that looks smooth and yellow, and that's before we even talk about how the pasta interacts with the sauce.
