After weeks of swelling and soreness, I'm only just now feeling normal again. And now I potentially just renewed the problem with this new chip mishap.

How sensitive is your intolerance, OP? I too am a genetic misfit and cheese doesn't trigger mine. Powdered cheese only has a trace of lactose at most.

Most cheese has very little lactose and even fresh mozzarella doesn't typically have enough to cause issues unless you eat like a pound of it. If you can have butter and not cheese it sounds like it could be an issue with dairy protein. Some people are okay with goat milk and cheese but not cow products. Butter has almost all of the protein removed but both butter and cheese are low in lactose.
