In the Balkans we make a very simple cabbage salad with a bit of oil and apple cider vinegar. You crush the sliced up cabbage with your hands for a few minutes and then let it sit for a few hours salted before dressing. I usually don't like eating cabbage as a salad because it has a weird styrofoam like feel when you're chewing it but when it softens like this the texture is great and it still retains the crunch. Great with grilled meat and whatnot.
