You crush the sliced up cabbage with your hands for a few minutes and then let it sit for a few hours salted before dressing. I usually don't like eating cabbage as a salad because it has a weird styrofoam like feel when you're chewing it but when it softens like this the texture is great and it still retains the crunch. I don't use lettuce much either, pretty much only for sandwiches and ceasar salads. and I don't think cabbage can replace either of those. I mean you could put it on a sandwich, but it doesn't sit as well as lettuce imo unless you make it into a coleslaw or something.

I would say though that lettuce is mostly competing with other leafy greens like spinach and arugula/rocket, more than it is with cabbage. cabbage doesn't work that well in a non-coleslaw-esque salad, but there are other greens better than lettuce for that too.

They are not interchangeable. I think many just think of Iceberg lettuce just because of it's crunch but it's pretty tasteless compared to say the English Globe lettuce but again it's best with salads and sandwiches.

A proper cabbage slaw is incredible. Not a big sloppy creamy mess kind, those are gross. My salads I make at home are mostly cabbage, thin mandolin shaved red and green cabbage, a leaf or two of iceberg lettuce torn into fork sized pieces, shaved carrot, shaved beets, and thin freshly sliced red onion (just keep shaving off the end of the same onion and put it back in the fridge)
iceberg AND cabbage are both absolute staples in the fridge!
