I'm looking to make my own lembas/caloriemate to take backpacking. Important considerations are calories per weight, shelf stability, nutrition, and how easy it is to poop out. The goal is something 135+ cal/z, high protein and fat, low sugar, and keep for two weeks wrapped in my pack. Pic is first test attempt. 1 cup oats0.5 cup walnut0.25 cup seeds (flax, sesame, etc)0.5 cup powdered milk0.5 cup peanut butter0.5 cup coconut oil0.25 cup cocoa0.25 cup honeyDash saltDash cornstarchDash waterGrind dry ingredients together, melt fats, mixBake at 350I was shooting for a dense cake and got it, but it's too dry and crumbly and needs more binder. No eggs because I'm concerned about spoilage. Next I think I'll try adding some dried fruit and 4x the oils. The consistency of extremely firm taffy or one of those hipster date bars would be ideal I think, though melting on a hot day is a risk for such a high fat content. Using ground fruit as the primary substrate will not meet my nutritional goals. Suggestions or recipes?

I make my own granola which isn't too different and this is an important step. It clearly does need more too, but I don't want it to end up sticky or greasy, either. I thought a cake would be ideal, but after trying it and thinking, a firmer texture is better. MRE recipes are a good thought, but the amount of preservatives and dehydration involved in them are not the direction I want to go here

Excellent breakfast, very filling and good taste. Had a chunk of the one left on the counter. Still very soft after sitting overnight but holds together well. The one in the freezer has firmed up nicely. This recipe has 1 cup coconut oil and 2 of peanut butter; I'll reduce that slightly and add a little more cocoa. 1/4 cup wasn't enough; the flavor was subsumed by the coconut. I will also add some of the suggested binder; my concern about it becoming too soft in a hot pack was well founded.
Put the counter loaf in the fridge to firm it up more. I will use one as a control test and leave it for an extended period to see how it keeps. I am also planning to eat nothing but lembas for the next few days to see how it affects my bowel movements.
I appreciate your DIY method but it looks like dried shit. Buy protein bars in bulk. You won't get tired if there's a variety of flavor.

This was addressed in a previous post.After an overnight in the fridge, the consistency is excellent. I will leave this now on the counter to see how it persists at room temperature after chilling. The control loaf remains wrapped and ready for examination in a week. Taste is still good on day 3. The next version will contain binding agents.
After returning to room temperature, the lembas loaf has become noticeably softer. Interestingly, it's also noticeably former after warming up all day than it was after cooling down from cooking. It is still too squishy for taking in my pack. Tomorrow I will purchase binders.
