I'm looking to make my own lembas/caloriemate to take backpacking. Important considerations are calories per weight, shelf stability, nutrition, and how easy it is to poop out. The goal is something 135+ cal/z, high protein and fat, low sugar, and keep for two weeks wrapped in my pack. Pic is first test attempt.
1 cup oats
0.5 cup walnut
0.25 cup seeds (flax, sesame, etc)
0.5 cup powdered milk
0.5 cup peanut butter
0.5 cup coconut oil
0.25 cup cocoa
0.25 cup honey
Dash salt
Dash cornstarch
Dash water
Grind dry ingredients together, melt fats, mix
Bake at 350

I was shooting for a dense cake and got it, but it's too dry and crumbly and needs more binder. No eggs because I'm concerned about spoilage. Next I think I'll try adding some dried fruit and 4x the oils. The consistency of extremely firm taffy or one of those hipster date bars would be ideal I think, though melting on a hot day is a risk for such a high fat content. Using ground fruit as the primary substrate will not meet my nutritional goals. Suggestions or recipes?

Is the baking just to cook the oats and dry it out? Seems like it would be hard to not have it be dry and crumbly unless it has more goo (like date paste, honey, or sugar syrup)

Cook the oats and induce chemical change for binding. I make my own granola which isn't too different and this is an important step. It clearly does need more too, but I don't want it to end up sticky or greasy, either. I thought a cake would be ideal, but after trying it and thinking, a firmer texture is better. MRE recipes are a good thought, but the amount of preservatives and dehydration involved in them are not the direction I want to go here

I've got some breakfast bars I make that are pretty calorie-dense.

>8 oz. can of sweetened condensed milk.
>16 oz. jar of peanut butter (heated up so it's runny).
>1 cup of oats
>Optional raisins, chocolate chips, anything else you want to add.

I suggest cutting them into bars a few hours after you put them in the fridge, so they've set but not dried out yet. Once they've set overnight, they're shelf-stable for at least a week or so, probably a good deal more but I've never kept them longer. They're a little crumbly, but keep them in a ziploc and you'll be fine.

I have several 1-2 week through hikes scheduled this year. I'm trying to plan these without resupply so weight and volume are important considerations. Raw peanut butter is great for calories per weight, but lacks meaningful protein and isn't really enjoyable to eat just by itself.

I have done this too. All the salt in that canned sloppa is fantastic but I find the taste awful. Loved it as a kid, now I can't even eat it as midnight drunk chow; rip my nostalgia. Toting around a bunch of cans on a long hike also sucks.
Bringing food you enjoy is great advice. That's a big part of why I'm fucking around with this: taste and nutrition profiles that satisfy me, pleasant and varied texture (definitely not grinding ingredients together again in this), the ability to snack on a chunk without cooking or making a mess all contribute to a pleasant meal on the trail. All the salt coating and tough texture of jerky and trail mix chaps the shit out of my lips and makes me immediately thirsty, so I'm looking to tamp that down. I don't care for super sweet stuff, though getting it on the trail does trigger lizard brain cravings. Again, something I'm looking to rein in to increase my enjoyment. Yoyoing blood sugar and appetite spikes are annoying. I'm autistic enough to appreciate the known routine of eating something familiar every day, but don't intend to make this my only food. I do wish I was hobbitmaxxed enough to carry my cast irons along and cook up a few good taters.

Excellent breakfast, very filling and good taste. Had a chunk of the one left on the counter. Still very soft after sitting overnight but holds together well. The one in the freezer has firmed up nicely. This recipe has 1 cup coconut oil and 2 of peanut butter; I'll reduce that slightly and add a little more cocoa. 1/4 cup wasn't enough; the flavor was subsumed by the coconut. I will also add some of the suggested binder; my concern about it becoming too soft in a hot pack was well founded.

You have a point on the egg, though both pasta and hardtack are very dry. The first attempt in the op is essentially oat pemmican, though peanut butter and coconut oil don't render in to tallow.

Yes, I do. But I'm not above trying it anyway, especially since the current version wasn't firm enough without a binder. This was addressed in a previous post.

After an overnight in the fridge, the consistency is excellent. I will leave this now on the counter to see how it persists at room temperature after chilling. The control loaf remains wrapped and ready for examination in a week. Taste is still good on day 3. The next version will contain binding agents.

After returning to room temperature, the lembas loaf has become noticeably softer. Interestingly, it's also noticeably former after warming up all day than it was after cooling down from cooking. It is still too squishy for taking in my pack. Tomorrow I will purchase binders.

Just a heads up aquafaba by itself (chickpea juice) is good, but a little secret is adding a very small amount of cream of tartar if you plan on whipping them into an egg white fluff (just practical advice)
