your not having the pancakes with the same doneness next to each other is bothering me slightlybut also the oven in my house growing up had the same "hot" warning light and it brought me back to first learning how to cook

I stock buttermilk as a pantry item and this is one of the main ways I use it up.DRY:125g AP Flour 1.5 TBSP sugar 1 TSP baking powder 1/4th TSP salt 1/4th TSP baking sodaWET:1 & 1/3d cup buttermilk 2 TBSP melted butter1 egg cap full of vanilla extract

Mine differs slightly in that I omit baking powder and swap the egg for chickpea flour. Not a vegan or vegetarian, but I find it makes little difference to the taste and no difference to texture and we'd rather use eggs as eggs. Anything baked or batter-y we make that usually has eggs, we tend to swap in chickpea flour instead. Also a splash more liquid and a little more fat.As for maple syrup, I make lemon pancakes from time to time with freshly powdered dried lemon zest in the batter and use lavender honey-syrup in place of maple. It's gay as hell but tastes good so idgaf
I don't have time to invent the universe to make them from scratch. Too busy making pies.
I can make them but i haven't mastered them. Sometimes they're really good and sometimes they're a bit gummy in the middle. I have a bad habit at blasting my food for quick cooking so that's obviously getting in the way. I know im supposed to pay attention to the bubbles but what else and what exactly in the bubbles m I looking for?

Whenever I eat pancakes my cheeks feel weird like when you blow up too many balloons. So I don’t eat ‘em or cook em.

Might I add, for those of you with an electric griddle, cooked at 375°f, 2 minutes per side has always been the sweet spot for me.

I don't know the calorie goal so keep that in mind on how many of each, but prioritize the eggs for the protein and fat.I love adding berries to my pancakes like that though! Yeah, I make them from scratch. The last batch I added some pureed, cooked sweet potato. I think I added some cinnamon. I'm sure I topped them with some ginger infused honey. It was insane. I have to do that again.

Are there really people who can't make pancakes at all ?? Maybe it's specific to me or to France or maybe I read too much Yotsuba, but I've always thought of pancakes then crèpes as the first things you learn to cook. (Pancake batter is slightly more complicated to make as you need to whisk the egg white, but they are a lot easier to manage in the pan.)
