Checker boarding makes them marginally easier to manage in square pan. Flipped ones come out first, then you have the voids to work with. Though my preferred setup is a rectangle griddle with one side cooler than the other.

I can in fact and i'll even post my recipe from memory for you. I stock buttermilk as a pantry item and this is one of the main ways I use it up.

DRY:
125g AP Flour
1.5 TBSP sugar
1 TSP baking powder
1/4th TSP salt
1/4th TSP baking soda

WET:
1 & 1/3d cup buttermilk
2 TBSP melted butter
1 egg
cap full of vanilla extract

That's pretty much everyone's pancake recipe. Mine differs slightly in that I omit baking powder and swap the egg for chickpea flour. Not a vegan or vegetarian, but I find it makes little difference to the taste and no difference to texture and we'd rather use eggs as eggs. Anything baked or batter-y we make that usually has eggs, we tend to swap in chickpea flour instead. Also a splash more liquid and a little more fat.
As for maple syrup, I make lemon pancakes from time to time with freshly powdered dried lemon zest in the batter and use lavender honey-syrup in place of maple. It's gay as hell but tastes good so idgaf

I have a bad habit at blasting my food for quick cooking so that's obviously getting in the way. I know im supposed to pay attention to the bubbles but what else and what exactly in the bubbles m I looking for?

Every problem with pancakes is related to cooking them at too high a heat. This is tricky because as you cook them your pan/griddle get slightly warmer because you didn't preheat it enough.

Either pick a fatass breakfast or a healthy breakfast. If you need to be a fencesitting asshole then have a small amount of pancakes with your otherwise healthy breakfast.

I like you because you mix imperial with metric. The recipe looks good, I'm sure you've tweaked it to your taste. Might I add, for those of you with an electric griddle, cooked at 375°f, 2 minutes per side has always been the sweet spot for me.

If suggest making one or two normal pancakes but eat them with eggs if you're trying to be healthy. I don't know the calorie goal so keep that in mind on how many of each, but prioritize the eggs for the protein and fat.
I love adding berries to my pancakes like that though! I've never had a problem with them breaking like that using a normal buttermilk pancake recipe.

Yeah, I make them from scratch. The last batch I added some pureed, cooked sweet potato. I think I added some cinnamon. I'm sure I topped them with some ginger infused honey. It was insane. I have to do that again.

Are there really people who can't make pancakes at all ?? Maybe it's specific to me or to France or maybe I read too much Yotsuba, but I've always thought of pancakes then crèpes as the first things you learn to cook. (Pancake batter is slightly more complicated to make as you need to whisk the egg white, but they are a lot easier to manage in the pan.)
