Do you guys have any recommendations on what to flavour a vegetable melody with for roasting?

Garlic.
Spritz of lemon after.
Parsley if you want a clean flavour.
Oregano if you like filthy, horrid, disgusting Greek "food".
And salt.
But most olive oil, garlic and salt. That's all you really need. Keep the cloves whole, btw

yeah pretty much this.
thyme, rosemary or sage are also good herbal options. I would only use one depending on what kind of flavour you want. can sub the lemon for balsamic vinegar or another source of acid.
but olive oil, salt and garlic is enough unless you specifically want it to taste herbal, especially if you have good quality vegetables. let them speak for themselves.

Garlic onion beets turnips rutabegas(swede) parsnips potatoes tomatoes eggplant peppers sweet potatoes, yams, pumpkin, butternut spaghetti carrots.
Broccoli, brussel sprouts cauliflower.

I'm not a big fan of summer squash and zucchini though. They are too bland imho.

This is underrated. I really like it on broccoli especially. I usually just do condiment mustard and fresh garlic though, and only use honey if it's going on a salad.
