My breakfast is usually an espresso, that was just my first test cook on a new freshly seasoned carbon steel pan

Looking at that steak, your pan is too hot, your steak too wet and your oil is not designed to work at the heat you’re using.

Next time: sit your steak on paper towels and allow to come to near room temperature. Salt the meat well. Oil the pan with beef tallow, lard or peanut oil and keep it on medium-high heat (about 75% of max).

Pat the steak completely dry and gently place in the pan. Sear for 2 minutes, lift the steak. Wait 30-45 seconds for pan to regain heat, then place the steak uncooked side down. Give it another 2 minutes. Turn heat down to 50%, give it another 90 seconds, then repeat on the other side.

As soon as the steak comes out of the pan, take the heat down to 30% max, make sure you have plenty of fat in the pan, then put the eggs in. By the time they’re done the steak will have rested.
Outcome: medium rare steak and perfectly cooked eggs.

anymore, i usually skip breakfast. i gotta get up early and go work. a stomach full of food just makes me sleepy. i'll usually have 1-2 cups of coffee in the Mr. Coffee machine, and MAYBE a mini bagel with cream cheese. then i take an early lunch around 11am. i prefer no breakfast with an early lunch.

Usually im not hungry again till dinner, I've got a lunch box full of snacks in case I'm low on energy. cheese, trail mix, hard boiled eggs, hard salami throughout the day as needed. Working on an empty stomach is unhealthy and unproductive.
