When you work in a restaurant kitchen you sometimes have to settle for a dunk in the sanitation bucket, but I usually rinse in a sink and avoid directly touching chicken on the line so I don't have to leave to wash. I'll use my tongs and then just sterilize them with burner fire. But yeah, you don't need to scrub up like you're going to perform surgery after touching chicken. But you also of course wouldn't knowingly not wash up. The possibility of contamination is always on your mind, but a good quick rinse is sufficient.
