Actual ground mustard seed mixed with water tastes like horseradish. You basically use it as a horseradish substitute. "Mustard" as in the condiment from a bottle doesn't generally have that much mustard seed in it and what is there has been cooked which keeps it mild compared to just mustard powder and water, even the "stronger" types.

It's dead simple, 1:1 powder and cold water. I usually go for a tablespoon at a time, so a small bowl or ramaken and a small spatula are handy.
