Personally I skip the potatoes, and load mine up with extra onion, carrot, and extra extra mushrooms. I also skip the wine and prefer a can of whole tomatoes in mine. Roasts and stews were pushed aside for spicy slop. White people food had to be hated so all the good dishes were suppressed from mainstream culture. Luckily I've seen a slow but steady resurgence.

I think that the real reason is that most people have no idea how to cook and they see a big piece of meat and are intimidated by it so they don't buy it leading to it disappearing from tables across the US. I say this as a bibimbap enjoyer from Los Angeles i make pot roast once a month and eat it once a weak (twice if it comes out really tasty and i'm feeling especially weak willed)
