I appreciate your obsession with my country but as an American, if I want olive oil that is guaranteed to be real then I buy American olive oil. If I want honey that's guaranteed to be real, I buy local honey. This kind of shit is a Euro and third world problem. Fake olive oil isn't being produced in America; it's being produced in Italy and those Italian oil counterfeiters are absolutely selling it globally.

They don't swap it with anything. They sell you bottles labeled as pure olive oil that are a lesser percentage of olive oil. On an industrial scale, replacing even 10% of the oil with a cheaper oil will make counterfeiters a lot of money. You think this isn't a global problem because you haven't learned about it and you're blindly confident in your ability to taste the difference in a bottle that's 100% olive oil and a bottle that's 90% olive oil and 10% soybean oil.

Even if you've managed to avoid buying adulterated oil yourself, you have absolutely eaten it at restaurants or in prepared foods.

I guess if you've decided to sell a fake product, you might as well try to pass it off as a high end product so you can profit as much as possible. This happens a lot with Manuka honey, which is very heavily counterfeited.
