There is nothing organic for these two crops, in the world, so get over it.The longest it can be marinated is 4yrs, and it is an extremely old fermentation process, not a gimmick. Tamaroku is 4th generation.I buy pictured off of amazon. Plenty of travel documentaries have visited them, so check youtube. I buy kikkoman for typical recipes, but I use light tamari.
