I already did all this stuff so I'm just posting the pictures now. It's in the oven already. I deglazed the pan after Browning both sides, forgot. I had onions to caramelize a bit and took the wine out into a cup, and did the onions.

Threw the garlic, green bean stems and onion waste in. Gave those a jiggle.
And wine and veal stock added. Into the oven it goes. See y'all in a few hours.
