When it first started appearing I swear red velvet was chocolate cake with beets which made it red. Like carrot cake, but beet. Fast forward and it's now just any ass cake with red food dye. I am sad.

It used to be unprocessed cocoa that would react with buttermilk to create a subtle red tint, which was nowhere near as vibrant as the colored box mixes most people use and had a unique tang from the buttermilk.
Beet juice was a popular dye that was used after everyone srarted using processed cocoa.
