It wasn't. It was a tender cut to begin with, I picked out a good one. People think that a rare cook is more tender, but I disagree. There's a whole spectrum between medium and well-done that gets ignored by steaklets. A tender cut will still be tender beyond medium.

If I was cooking a lean cut like a filet I would have done it differently, but I enjoy a heavy sear and well-rendered fat on a steak like this.

If you have a big freezer, the cheapest and most flavorful bet is breaking down your own chuck roll sub primal. It has flavorful, Fatty cuts, and some parts are tough if you want. Relatively cheap(considering beef prices nowadays). It’s a lot of beef, usually like 20-25 lbs. places like Costco typically have it, YMMV on location but roughly 6.5-7/lb. There are cheaper cuts like eye round or London broil/top round but they are lean and lack flavor.

The chuck roll has a good mix of “steak” cuts like chuck eyes(delmomicos) and Denver steaks(sometimes referred to as boneless short ribs too). Chuck eye is the front end of the rib-eye so has ribeye flavor and marbling but gets tougher/more sinewy as the muscle groups approach the neck of the cow. Denver is somewhat similar to strip loin but often has really good intramuscular marbling for the price, both are a bit tougher than their pricier cousins.

Chuck eyes are probably my favorite steak for the price to flavor and texture ratio, there’s just not a lot of it on the cow

Then there’s a flank steak like piece, and the rest is good stew meat, stir fry beef, or ground beef, or if you really want, cut it up and eat it like steaks.

They've been expensive lately, about $7/lb at Restaurant Depot. And yield on a nicely marbled chuck roll is only 70%-80% tops. When Costco has strip loin for $9.99/lb like they did most of this winter it makes no sense. My experience has been that the quality of steaks you get out of a chuck roll varies wildly too. But I'm still looking forward to prices coming down because it is really fun to break them down.
