Color is a lousy, inaccurate & inconsistent gauge for meat doneness.
125f for tenderloin, 130f for your average strip/ribeye steak, 135f for very marbled cuts (I'm talking A5 or premium-quality US beef).
Don't be a cheap fuck, grab a meat thermometer, decent ones can be had for $20 or even less.

3 or 4 depending on mood. Last time I cooked, I did 3. Pan to really high heat, butter in pan, steak in pan about a min and a half both sides, set aside covered to rest, put brussel sprouts in pan with leftover steakjuice and butter, eat after sprouts were done. Very good. I deleted the pic I took, or I would include it.
