Thats pancetta I cut in small strips. I use them instead of bacon because theres no salt in it.

They look very tasty, and I agree with your seasoning reasoning. For mine my process is:
>shred potatoes
>hand squeeze potato liquid out and place squeezed shreds in large bowl or bag
>and salt, pepper, garlic powder, a little onion powder, and oil of choice
>mix shreds with seasoning
>place on hot pan, cover
>once bottom is brown turn over and leave uncovered until other side is brown
The cooking process makes them a little gelatinized in the middle but I like the contrast between the crisp outsides and the gooey interior

buncha fake americans itt. hashbrowns ideally should be more scattered and loose, not in a patty, despite what mcdonalds has made yankees believe. when you squish it into a patty like that you risk steaming the potato in the middle which results in softness. when you scatter the potato, every shred crisps up. that is the proper way to hash a brown.
also fresh potatoes are worthless for this. you have to squeeze the liquid which takes too much time and effort and you never get enough of it out. just use frozen hashbrowns, and use more oil than you think, until you're almost deep frying the hashbrowns.
