Which is really just to say American cheese is a mixture of cheese, emulsifiers, and milk with some added seasoning. It's a more solid version of a queso or other cheese sauce and you don't see anyone giving people shit for eating that.

THERE IS A DIFFERENCE. there's the heavily processed cheese product singles, yes those are gross, but there's also plenty of actual cheese made here. wisconsin and vermont are massive cheese producers

Anon, if that's what you take from what I wrote then you need to reread. Cheese made in America and American cheese are entirely different things, and both are good. American cheese, the product, is simply taking ~50% cheese along with milk, and emulsifiers, and mixing it together to get a creamier product that melts well. You know, the same thing people do when making mornay, queso or any other cheese sauce? The only difference is that American cheese has enough cheese and not enough milk that it remains solid. If American cheese had first been developed for fine dining at a kitchen specializing in molecular gastronomy techniques, you wouldn't be calling it gross or heavily processed.

And regarding the ratios:

No one would bat an eye if it didn't come from a major company. Sure, prepackaged food is mediocre, people eat too much heavily processed foods, and companies are generally awful. But American cheese isn't the problem.
