This but unironically. Grilling burgers lets all the moisture and fats burn up and dry out the patty. Cast iron skillet keeps it nice and juicy.

Never made it like this before, not really sure when to pull it. It's marinated pork shoulder. It's still really cool on the inside- we're about an hour ten in- but the bottom nearer the outside is around 150.

I'm thinking around 150-160, probably. I can trim the crispy goodness and finish the interior in the oven or put it back in, I guess?

It was okay. Most of the recipes I read said to go for 350 at 1:40 or so. I ended up letting it ride for closer to 2:30 I guess.

The flavor was fine but it lacked crispness. I was afraid it would burn the outside if I went further, but that appears to be unfounded.

The biggest problem is I probably used too much pineapple juice in the marinade. It was too mushy at times and that appears to be the culprit.

You live and learn, or course. For the level of effort a plain old smoked butt would have been much easier. That said I still have a lot of the marinade left so i'm going to try it on shrimp, chicken, and pork loin.

Chicken legs marinated in blended serranos, banana peppers, garlic, shio koji, fish sauce, salt, and mandarin and lime juice for like 12 hours.
Smoked at 250ish with post oak and then I let the smoker get up to like 400 degrees in the last 10 mins. Pulled at 165-170 internal.
Shio koji has enzymes that break down the proteins in meat, which makes the meat more tender and enhances the flavor.
Lots of flavor and the meat is super juicy. Pulls off the bone cleanly as well.

I think next time I'll wipe the marinade completely off.
