Cook almost perfect inside, not enough crust on the outside.
Try drying off your meat before letting it sit out to get room temp and same with before putting it on the grill/pan. Also use some pressure on top once in the pan to help all of the steak touch the hot pan.

I'm not actually searing with a pan, I'm using a grill. But I think a stone on top would help get it pressed against the hot metal and a little closer to my charcoals. I also might get a smaller grill for when I'm cooking for just me

Ah. Grill is good. Better for flavor. Even when I do a reverse sear or sear in a pan first, I always use the grill with it. For a reverse sear, I get the internal temp to around 110F, then I put it on the grill as hot as it can get, 2 minutes on each side. Rotate after 30 seconds for diamond grill marks.

The steak did not sit in a cast iron for longer than 20 seconds, barely any heat in it, barely any brown.
Unless your cast iron was at medium temps.

Like I said here, my dumb apt keeps changing my good shit to "eco" junk. Sink faucet (takes forever to fill even a glass of water), stovetop ("uses less gas" the sticker said, yeah and less heat), showerhead (feels more like my wall is pissing on my head), etc. It just doesnt get very hot after they replaced my perfectly working gas stovetop with one that struggles at max to produce enough heat to make water bead properly.

Probably polarizing, but the medium rare burger is one of my favorites. The meat remains tender and juicy without relying on grease and sauces to compensate for a burned and dry patty. Cooked to an internal of around 135-140.

The ground beef I used was from a cow I raised since birth and had slaughtered recently, so it is all from one healthy animal. Over 600lbs of delicious grass fed beef in my freezer right now. Feels so good to finally have inexpensive beef again.
Grease is definitely a part of juiciness at medium rare, but once you get to the well done fast food style burgers you lose all the moisture in the meat and the only thing left is the grease.

The burger gets crunch from the crust and the pickles, as well as the toasted buns

Mustard belongs on burgers more than ketchup does

So when I first started making the first rendition of these burgers (they've evolved quite a bit over time) it was just a ripoff of Alton Brown's from Good Eats

And in that episode he implores everyone to just TRY a burger with a toasted bun, mayo, ground black pepper on the mayo, not on the burger cause it'll burn, and that's it if I recall correctly. No cheese and no other sauces. And when I said that to a friend he said "well I'm putting mustard on it no matter what"

I don't know what the point of that was

But yeah mustard always goes on the burgers now

Onions are spice and crunch instead of pickles, ketchup gives a little sweet and acidity. Mayo adds some richness.
Mustard is spice/acidity and pickles are crunch and acidity.
Not much different when making a balanced burger just different tastes.
