My favourite variety of fried rice is ham and tomato fried rice which often has scrambled egg in it as well. So fucking good.

Try it with zucchine instead or with green tomato. I like them both better than ripe 'maters. Keep the ketchup sauce the same but use those vegetables and you'll love it.

I learned a good recipe from that Mike Chen guy for tomato rice.
You put rice in a rice cooker, core a tomato and put it jnnth in the middle. Add a little soy sauce, sesame oil and pepper on the tomato.
Then just add water and cook as normal.
When it's finished you mash up the tomato and stir it through the rice.
Fry up a couple eggs and you got a great breakfast!

Yeah, I don't know why Western interpretations of Chinese food omit tomato. It's probably the most common vegetable in Chinese cooking other than alliums. Yes, more common than peppers.
Tomato beef soup. Ham and tomato fried rice. Tomato rice. Chilli crab/prawn. Sour fish and tomato. Tomato pork patty. Chengdu tomato salad. Etc etc etc.
It seems like in the US, the only place to get tomatoes in Chinese food is the hood. Hood Chinese places often have yat gaw mein AKA Chinese spaghetti. It's etymologically related to the better-known yakka men from New Orleans except this is a gravy-laden dish rather than a soup. Chicken, beef, pork or shrimp are cooked with scrambled egg in Chinese tomato-onion sauce and served over lo mein noodles.
