Do you eat the GREENS from vegetables such as beets and turnips, /ck/? Do you peel and cook the soft interiors of certain vegetable stems, like broccoli?

Beet greens are my favorite green. One of the major grocers in the area used to set it out for free. Got it for free at farmer's markets too after one of the workers offered to cut it off for me and I told them it was my favorite part. They gave me a big bunch of discarded beet greens they'd been removing for people all day.

I peel asparagus before cooking. If I peel broccoli stem I just snack on it while prepping.

I just peel enough to get rid of the little triangle bits, and near the bottoms above where I cut a bit moreso to help it cook more evenly.

If the broccoli head is big enough, yeah I shave off the stem. I remember buying a whole head for the first time, chopping it up and boiling em. I tried the trunk and was amazed that it was sweet af. Broccoli is sweet, wtf, nobody talks about this. If the trunk isn't big enough though, it isn't worth it so I'll just eat the whole thing
