It's not sad boiled wypipo-eating-catfood chicken. The rice is done in the "broth" made from cooking the chicken with extra ginger, garlic, and some of the extra chicken skin and fat trimmings. It's not just some Minute Rice tragedy neither.It's not as boring as it looks, but it is better with a bit of a char or sear on the chicken skin and a bit of shallot in the rice. When I make it, I remove the skin after the chicken's done and pan fry it.

I'm just not Chinese enough to prefer chicken skin leather over something maillarded and crisp... so I'll underpoach a little bit and give it a trip under the broiler or torch, or just pull the skin off and crisp it up. The meat still winds up soft and juicy.
